Ingredients

  • 300 gred lentils
  • 1onion — chopped
  • 2 clovesgarlic
  • 1 tspcumin
  • 1.5 Lwater
  • 1 tbspolive oil
  • 1lemon — juiced
  • to tastefine sea salt and black pepper

Method

  1. Start by finely chopping 1 onion and mincing 2 cloves of garlic. Heat 1 tbsp of olive oil in a large pot over medium heat. Once the oil shimmers, add the onion and garlic, stirring occasionally. Cook until the onion becomes translucent and the garlic is fragrant, ensuring they do not brown, which would alter the dish's flavor.
  2. Add 1 tsp of cumin to the pot, stirring it into the softened onions and garlic. Allow the cumin to toast for about a minute, releasing its aromatic oils, which will deepen the flavor of the dish.
  3. Rinse 300 g of red lentils under cold water until the water runs clear. Add the lentils to the pot, stirring them to coat with the aromatic base. This step ensures the lentils absorb the flavors before they start cooking.
  4. Pour in 1.5 L of water, stirring to combine with the lentils and aromatics. Increase the heat to bring the mixture to a gentle boil. Once boiling, reduce the heat to low, covering the pot with a lid, and let it simmer.
  5. Simmer the lentils for about 20-25 minutes, stirring occasionally. The lentils are done when they are tender and have absorbed most of the liquid, creating a thick, stew-like consistency. The mixture should be creamy, and the lentils should have a soft texture without being mushy.
  6. Cut the lemon in half and squeeze its juice into the pot, being careful to catch any seeds. Stir the lemon juice into the lentil mixture, which will brighten the flavors and add a subtle tang.
  7. Taste the lentils and season with fine sea salt and black pepper to your liking. Stir well to ensure the seasoning is evenly distributed throughout the dish. Serve the Caribbean Lentil Pot 3 warm, with a drizzle of olive oil on top if desired, ready for sharing at the table.
