Caribbean Lentil Pot

Caribbean Lentil Pot, a staple of home-cooked Caribbean meals, is all about simplicity and abundance. This dish is a reflection of how families across the Caribbean region bring comfort to their tables. It's not reserved for special occasions but is a regular feature in everyday dining, where the salt is measured by a knowing hand and the pot is filled with a generous spirit.

The flavors are straightforward yet deeply satisfying. Earthy red lentils meld with the warmth of cumin and the gentle bite of garlic, all brightened by a squeeze of fresh lemon. This dish is meant to be shared, a warm, comforting bowl that invites everyone to gather around the table.

Ingredients

  • 300 gred lentils
  • 1onion — chopped
  • 2 clovesgarlic
  • 1 tspcumin
  • 1.5 Lwater
  • 1 tbspolive oil
  • 1lemon — juiced
  • to tastefine sea salt and black pepper

Method

  1. Start by finely chopping 1 onion and mincing 2 cloves of garlic. In a large, heavy-bottomed pot, heat 1 tablespoon of olive oil over medium heat. Add the onion and garlic, stirring occasionally, and cook until the onion becomes translucent and the garlic releases its aroma, about 5 to 7 minutes. Be careful not to let them brown, as this could impart a bitter taste.
  2. Once the aromatics are softened, sprinkle in 1 teaspoon of cumin. Stir the cumin into the onion and garlic mixture, allowing the spices to toast gently for about a minute. This will release the cumin's essential oils and deepen its flavor, creating a fragrant base for your dish.
  3. Rinse 300 grams of red lentils under cold water until the water runs clear. Add the rinsed lentils to the pot, stirring them into the aromatic mixture to coat them evenly. This step helps the lentils absorb the flavors of the aromatics and spices.
  4. Pour in 1.5 liters of water, stirring to combine. Increase the heat to bring the mixture to a gentle boil, then reduce the heat to low to maintain a simmer. Cover the pot partially with a lid, allowing steam to escape, and let the lentils cook until they are tender and have absorbed most of the liquid. The lentils should be soft but not mushy, with a creamy texture.
  5. Once the lentils have reached the desired texture, taste the dish and season with fine sea salt and black pepper to your liking. Remember, the salt should enhance the natural flavors without overpowering them.
  6. Finish the dish by cutting a lemon in half and squeezing its juice over the lentils. Stir well to incorporate the citrus, which will brighten the flavors and add a fresh, tangy note. Serve the Caribbean Lentil Pot warm, inviting everyone to gather and share in this comforting meal.
