Caribbean Vegetable Soup

Ingredients

  • 400 gmixed vegetables — carrot celery potato
  • 1onion
  • 1.5 Lvegetable broth
  • 2 tbspolive oil
  • to tastefine sea salt and black pepper

Method

  1. Start by finely chopping 1 onion. Heat 2 tablespoons of olive oil in a large pot over medium heat. Add the chopped onion to the pot, stirring occasionally. Cook until the onion becomes translucent and releases a sweet aroma, ensuring it does not brown.
  2. Prepare 400 g of mixed vegetables by cutting them into bite-sized pieces. Consider the cooking time of each vegetable; root vegetables like carrots and potatoes should be cut smaller than quicker-cooking vegetables like zucchini or bell peppers.
  3. Add the mixed vegetables to the pot with the softened onions. Stir them gently to coat with the oil and onion mixture, allowing them to begin releasing their natural flavors. Cook for a few minutes until the vegetables start to soften slightly.
  4. Pour in 1.5 liters of vegetable broth, ensuring it covers the vegetables completely. Increase the heat to bring the mixture to a gentle boil, then reduce to a simmer. Cover the pot partially to allow steam to escape, and let it cook until the vegetables are tender but still hold their shape.
  5. Check the texture of the vegetables by piercing them with a fork; they should be soft but not mushy. Taste the soup and adjust the seasoning with fine sea salt and black pepper to your preference.
  6. Finish the soup by drizzling a thread of olive oil over the top for added richness. Stir gently to incorporate the oil, then serve the soup hot, inviting everyone to gather around the table and enjoy this comforting Caribbean dish.
