Ingredients

  • 600 gbeef shank — cubed
  • 1onion
  • 2carrots
  • 1.8 Lbeef broth
  • 2 tbspoil
  • to tastefine sea salt and black pepper

Method

  1. Begin by preparing your aromatics. Peel and finely chop 1 onion. Heat 2 tablespoons of oil in a large pot over medium heat. Add the chopped onion, stirring occasionally, and cook until it becomes translucent and fragrant, about 5 to 7 minutes. Be careful not to let the onion brown, as this will alter the flavor of the soup.
  2. While the onion is cooking, peel and slice 2 carrots into thin rounds. Once the onion is ready, add the carrots to the pot. Stir them into the onions and continue to cook for another 3 to 4 minutes, allowing the carrots to start softening and release their sweetness.
  3. Next, prepare the beef shank. Cut 600 g of beef shank into bite-sized pieces, trimming away any excess fat. Add the beef to the pot, stirring to coat it with the oil and aromatics. Cook the beef until it is browned on all sides, which will help to deepen the flavor of the soup.
  4. Pour in 1.8 L of beef broth, ensuring that the beef and vegetables are fully submerged. Increase the heat to high and bring the broth to a gentle boil. Once boiling, reduce the heat to low and cover the pot, allowing the soup to simmer gently.
  5. Let the soup simmer for about 1 to 1.5 hours, or until the beef is tender and the flavors have melded together. The beef should be easy to pierce with a fork, and the broth should have a rich, savory aroma.
  6. Taste the soup and adjust the seasoning with fine sea salt and black pepper to your preference. Remember, this dish is meant to be shared, so season generously to enhance the communal experience.
