Colombian Beef Broth Soup 2

Colombian Beef Broth Soup 2 is a cherished staple at home tables across Colombia, a comforting presence during both weekday dinners and leisurely weekend lunches. This version captures the essence of home cooking, where each handful of salt is measured by instinct and every drop of fat enriches the broth. It's a dish that embodies the quiet confidence of Colombian home cooks, who know their way around a pot without needing a recipe.

The soup should greet you with a rich, meaty aroma, its broth offering a deep, satisfying warmth. Hearty chunks of beef shank lend a tender texture, while carrots and onions soften and sweeten the pot. The result is a robust, savory broth that cradles the palate, seasoned simply with salt and black pepper to let the ingredients speak for themselves. It's a dish that invites you to linger, spoon by spoonful, around a table set for sharing.

Ingredients

  • 600 gbeef shank — cubed
  • 1onion
  • 2carrots
  • 1.8 Lbeef broth
  • 2 tbspoil
  • to tastefine sea salt and black pepper

Method

  1. Begin by heating 2 tablespoons of oil in a large, heavy-bottomed pot over medium heat. Once the oil shimmers, add 1 finely chopped onion. Stir occasionally, allowing the onion to soften and become translucent, which will take about 5 minutes. Be careful not to let the onion brown, as this could impart a bitter taste to the soup.
  2. Next, add 600 g of beef shank to the pot. Sear the beef on all sides until it develops a rich, brown crust. This step enhances the flavor of the broth by creating a deep, savory base.
  3. Peel and chop 2 carrots into bite-sized pieces and add them to the pot. Stir them with the beef and onions, allowing the carrots to release their sweetness. This should take about 3 minutes, during which the carrots will begin to soften slightly.
  4. Pour in 1.8 L of beef broth, ensuring that the beef and vegetables are fully submerged. Increase the heat to high until the broth begins to boil, then reduce to a gentle simmer. Cover the pot with a lid, leaving a small gap for steam to escape, and let it simmer until the beef is tender and the flavors meld, about 1.5 to 2 hours. The beef should be easy to pull apart with a fork.
  5. As the soup simmers, periodically check for seasoning. Add fine sea salt and black pepper to taste, keeping in mind that the flavors will concentrate as the broth reduces. Adjust the seasoning gradually to avoid over-salting.
  6. Once the beef is tender and the broth is rich and flavorful, finish the soup with a final taste test. Adjust the seasoning if necessary, and consider adding a squeeze of fresh citrus or a drizzle of oil for brightness. Serve the soup hot, inviting everyone to gather around the table and enjoy this comforting Colombian dish.
