Colombian Chicken Broth

Ingredients

  • 700 gchicken pieces
  • 1onion
  • 2carrots
  • 1.8 Lwater
  • 2 tbspolive oil
  • 1bay leaf

Method

  1. In a large pot, heat 2 tablespoons of olive oil over medium heat. Once the oil is shimmering, add 1 chopped onion and 2 chopped carrots. Stir occasionally and cook until the onion becomes translucent and the carrots start to soften, about 5 minutes. This step builds the fragrant base for your broth, ensuring the aromatics release their flavors without burning.
  2. Add 700 g of chicken pieces to the pot, allowing them to brown slightly on all sides. This step helps to develop a deeper flavor in the broth. Stir the chicken with the vegetables to coat them in the oil and aromatics.
  3. Pour in 1.8 liters of water, ensuring the chicken and vegetables are fully submerged. Add 1 bay leaf to the pot. Increase the heat to high and bring the mixture to a gentle boil.
  4. Once boiling, reduce the heat to low and let the broth simmer gently. Skim off any foam or impurities that rise to the surface using a spoon. Allow the broth to simmer until the chicken is cooked through and the flavors have melded, which is indicated by the chicken being tender and the broth having a rich aroma.
  5. Taste the broth and season with fine sea salt and black pepper to your preference. Adjust the seasoning gradually, tasting as you go to ensure a balanced flavor. Remove the bay leaf before serving.
