Consommé Julienne

Consommé Julienne is a staple in the repertoire of classic French dining rooms, where its clarity and simplicity are celebrated. Often prepared as a first course, it is a dish that brings warmth and comfort to the everyday table, inviting diners with its gentle, fragrant steam and straightforward presentation.

The consommé should taste light and pure, with the beef or chicken stock providing a rich yet delicate base. Thin strips of carrot, leek, and celery add a subtle sweetness and texture, while a hint of fresh chervil or parsley enlivens the broth. Seasoned with a touch of fine salt and white pepper, this soup is both humble and elegant, perfect for any occasion.

Ingredients

  • 1.5 Lclear beef or chicken stock
  • 1carrot — cut into fine julienne
  • 1leek — cut into fine julienne
  • 1celery stalk — cut into fine julienne
  • 1 tbspbutter
  • 2 tbspchervil or parsley — chopped
  • to tastefine salt and white pepper

Method

  1. Begin by preparing the vegetables. Peel and trim the carrot, then slice it into thin matchsticks, about 2 inches long. Clean the leek thoroughly to remove any grit, then slice it into thin strips similar in size to the carrot. Trim the celery stalk and cut it into thin julienne strips as well. This uniform size ensures even cooking and a pleasing texture in the final dish.
  2. In a large pot, melt 1 tablespoon of butter over medium-low heat. Once the butter is foamy and fragrant, add the sliced carrot, leek, and celery. Stir gently to coat the vegetables in the butter, allowing them to sweat slowly. You want the vegetables to soften and release their aromas without browning, which will take about 5 to 7 minutes. The kitchen should fill with a sweet and savory scent.
  3. Once the vegetables are softened and fragrant, pour in 1.5 liters of clear beef or chicken stock. Increase the heat to medium-high and bring the mixture to a gentle simmer. The stock should just barely bubble around the edges, which helps the flavors meld without becoming cloudy. Maintain this gentle simmer.
  4. Continue simmering until the vegetables are tender, which should take about 15 to 20 minutes. You'll know they're ready when they offer no resistance when pierced with a fork and have absorbed some of the broth's flavor, giving them a slightly translucent appearance.
  5. Taste the consommé and adjust the seasoning with fine salt and white pepper to your preference. The broth should taste balanced and rounded, with no raw or harsh flavors. If desired, add a touch of acidity with a squeeze of lemon juice to brighten the flavors.
  6. Finely chop 2 tablespoons of chervil or parsley and stir it into the soup just before serving. This adds a fresh, herbal note that complements the rich broth. Ladle the hot consommé into warmed bowls, ensuring an even distribution of vegetables in each serving. Serve immediately, allowing the aroma to invite everyone to the table.
