Ingredients

  • 600 gbeef shank — cubed
  • 1onion

  • 1.8 Lbeef broth

Method

  1. Begin by heating 2 tablespoons of oil in a large, heavy-bottomed pot over medium heat. Peel and chop 1 onion into medium-sized pieces and add it to the pot. Stir occasionally, allowing the onion to soften and release its aroma, ensuring it turns translucent but does not brown.
  2. Peel and slice 2 carrots into rounds and add them to the pot with the onion. Stir the vegetables together, letting them cook for about 5 minutes until the carrots begin to soften slightly and the mixture becomes fragrant.
  3. Increase the heat to medium-high and add 600 g of beef shank to the pot. Sear the meat on all sides until it develops a rich, brown crust. This step will enhance the flavor of the broth, so ensure the beef is well-browned.
  4. Pour in 1.8 L of beef broth, ensuring the meat and vegetables are fully submerged. Bring the mixture to a gentle boil, then reduce the heat to low, allowing it to simmer. Skim off any foam or impurities that rise to the surface, ensuring a clear broth.
  5. Let the soup simmer gently for about 1.5 to 2 hours, or until the beef is tender and easily pulls apart with a fork. The broth should be rich and flavorful, with the vegetables soft but not mushy.
