Ingredients

  • 300 gred lentils
  • 1onion — chopped
  • 2 clovesgarlic
  • 1 tspcumin
  • 1.5 Lwater
  • 1 tbspolive oil
  • 1lemon — juiced
  • to tastefine sea salt and black pepper

Method

  1. Start by finely chopping 1 onion and mincing 2 cloves of garlic. Heat 1 tablespoon of olive oil in a large, heavy-bottomed pot over medium heat. Once the oil shimmers, add the onion and garlic, stirring frequently. Cook until the onion becomes translucent and the garlic releases its aroma, being careful not to let them brown.
  2. Sprinkle 1 teaspoon of cumin into the pot, stirring it into the softened onion and garlic. Allow the cumin to toast for about a minute, which will enhance its flavor and integrate it into the aromatic base.
  3. Rinse 300 g of red lentils under cold water until the water runs clear. Add the lentils to the pot, stirring them into the aromatic mixture. Pour in 1.5 liters of water, ensuring the lentils are fully submerged.
  4. Increase the heat to bring the mixture to a gentle boil. Once boiling, reduce the heat to low, allowing the pot to simmer. Stir occasionally, and cook until the lentils are tender and have absorbed most of the liquid, creating a creamy consistency.
  5. Cut a lemon in half and squeeze the juice from one half into the pot, stirring to combine. Taste the lentil pot and season with fine sea salt and black pepper to your preference, adjusting as needed.
  6. Before serving, consider adding a drizzle of olive oil for richness. Serve the lentil pot warm, garnished with lemon wedges from the remaining half, inviting everyone to add more citrus to their taste.
