Ingredients

  • 600 gbeef shank — cubed
  • 1onion

  • 1.8 Lbeef broth
  • 2 tbspoil

Method

  1. In a large, heavy-bottomed pot, heat 2 tablespoons of oil over medium heat. Once the oil is shimmering, add 1 chopped onion. Stir occasionally, cooking until the onion becomes translucent and soft, releasing a sweet aroma, about 5 to 7 minutes. Ensure the onion does not brown, as this would alter the soup's flavor profile.
  2. Add the 600 g beef shank to the pot, searing each side until browned. This should take about 3 to 4 minutes per side. Browning the meat enhances the soup's depth of flavor, creating a rich base.
  3. Pour in 1.8 L of beef broth, scraping the bottom of the pot with a wooden spoon to release any browned bits. These bits are packed with flavor and will enrich the broth. Bring the mixture to a gentle boil.
  4. Once boiling, reduce the heat to low and cover the pot partially. Let the soup simmer gently, allowing the beef to tenderize. This process should continue until the beef is tender enough to be easily pierced with a fork, indicating it's cooked through and infused with the broth's flavors.
  5. Peel and slice 2 carrots into rounds, then add them to the pot. Continue to simmer until the carrots are tender but still hold their shape, which should take about 10 to 15 minutes. The carrots will add a subtle sweetness and color to the soup.
  6. Taste the soup and season with fine sea salt and black pepper to your preference. Stir well to ensure the seasoning is evenly distributed. Adjust seasoning gradually, as the flavors will continue to develop.
  7. Once seasoned to your liking, remove the pot from heat. Allow the soup to rest for a few minutes before serving, letting the flavors meld further. Serve hot, encouraging guests to share and enjoy the comforting warmth of this Filipino home-cooked dish.
