Filipino Chicken Broth

Filipino Chicken Broth is a staple in Filipino households, often prepared when a comforting and nourishing meal is needed. This dish, simmered slowly with love, is a reflection of home cooking where intuition guides the cook. It is not tied to a specific holiday or occasion but rather is a warm embrace on any given day, especially during cooler seasons or when someone feels under the weather.

The broth is a delicate blend of tender chicken, sweet carrots, and aromatic onion, all harmoniously infused with the subtle fragrance of bay leaf. Olive oil adds a silky richness, while salt and black pepper are applied with a practiced hand, creating a balanced and deeply satisfying flavor profile. It's a dish best enjoyed in a communal setting, with everyone gathered around the table, bowls in hand, savoring every spoonful.

Ingredients

  • 700 gchicken pieces
  • 1onion
  • 2carrots
  • 1.8 Lwater
  • 2 tbspolive oil
  • 1bay leaf
  • to tastefine sea salt and black pepper

Method

  1. In a large pot, heat 2 tablespoons of olive oil over medium heat. Once the oil is shimmering, add 1 chopped onion and sauté until it becomes translucent and fragrant, about 3-4 minutes. Stir occasionally to ensure the onion softens evenly without browning.
  2. Add 700 g of chicken pieces to the pot, stirring them with the onions to lightly brown the surfaces. This step helps to develop a deeper flavor in the broth. Ensure the chicken is evenly coated with the oil and onions.
  3. Pour in 1.8 liters of water, making sure the chicken is fully submerged. Increase the heat to high and bring the water to a gentle boil. As the water heats, use a spoon to skim off any foam or impurities that rise to the surface.
  4. Once boiling, reduce the heat to low and add 2 peeled and chopped carrots along with 1 bay leaf. Cover the pot partially with a lid, allowing some steam to escape, and let it simmer gently. The broth should have a gentle movement, with occasional bubbles breaking the surface.
  5. Simmer the broth for about 45 minutes, or until the chicken is cooked through and tender. The meat should easily pull away from the bone, and the carrots should be soft but not mushy. This indicates the flavors have melded well.
  6. Taste the broth and season with fine sea salt and black pepper to your preference. Adjust the seasoning gradually, tasting after each addition to ensure the flavors are balanced. If desired, finish with a drizzle of olive oil for added richness before serving.
