Ingredients

  • 400 gmixed vegetables — carrot celery potato
  • 1onion
  • 1.5 Lvegetable broth
  • 2 tbspolive oil
  • to tastefine sea salt and black pepper

Method

  1. Start by preparing your base. In a large pot, heat 2 tablespoons of olive oil over medium heat. Once the oil is shimmering, add 1 finely chopped onion. Stir occasionally, allowing the onion to soften and become translucent, which should take about 5 minutes. Be careful not to let it brown, as this can alter the flavor of the soup.
  2. Once the onion is soft and fragrant, pour in 1.5 liters of vegetable broth. Stir to combine, then increase the heat to bring the broth to a gentle boil. This will help infuse the broth with the onion's sweetness.
  3. Add 400 grams of mixed vegetables to the pot. If using a variety of vegetables, start with those that take longer to cook, such as carrots or potatoes, and follow with quicker-cooking vegetables like green beans or leafy greens. Stir well to ensure all vegetables are submerged in the broth.
  4. Reduce the heat to low and cover the pot with a lid. Allow the soup to simmer gently. You'll know it's ready when the vegetables are tender but still hold their shape, and the broth is rich and aromatic. This may take around 15 to 20 minutes, depending on the size and type of your vegetables.
  5. Once the vegetables are cooked to your liking, taste the soup and season with fine sea salt and black pepper to taste. Stir well to distribute the seasoning evenly. If desired, finish with a drizzle of olive oil for added richness before serving.
