This broth should envelop you in its warmth, with tender chicken pieces and the earthy sweetness of carrots and onions. The bay leaf subtly infuses the liquid, while the salt and pepper are adjusted to taste, ensuring a balanced savoriness. Ingredients

  • 700 gchicken pieces
  • 1onion
  • 2carrots
  • 1.8 Lwater
  • 2 tbspolive oil
  • 1bay leaf
  • to tastefine sea salt and black pepper

Method

  1. Begin by heating 2 tablespoons of olive oil in a large, heavy-bottomed pot over medium heat. Once the oil is shimmering, add 1 chopped onion and stir occasionally. Cook until the onion becomes translucent and soft, releasing a sweet aroma, which should take about 5 to 7 minutes. Be careful not to let the onion brown, as this would alter the flavor profile of the broth.
  2. Add 700 g of chicken pieces to the pot, ensuring they are evenly distributed. Stir the chicken with the onions, allowing it to sear slightly on all sides. This step helps to lock in the juices and build a deeper flavor for the broth.
  3. Introduce 2 chopped carrots into the pot, stirring them in with the chicken and onions. The carrots will add a natural sweetness and depth to the broth. Continue cooking for about 3 minutes, until the carrots begin to soften slightly.
  4. Pour in 1.8 L of water, ensuring it covers all the ingredients. Add 1 bay leaf to the pot, which will infuse the broth with a subtle, earthy aroma. Increase the heat to high and bring the mixture to a gentle boil.
  5. Once boiling, reduce the heat to low and let the broth simmer gently. This slow cooking process will allow the flavors to meld together and the chicken to become tender. Simmer until the chicken is cooked through and the broth has a rich, golden hue, which should take about 45 minutes.
  6. Taste the broth and season with fine sea salt and black pepper to your preference. The salt should enhance the natural flavors without overwhelming them. Adjust the seasoning gradually, tasting as you go to achieve the perfect balance.
