Ingredients

  • 700 gchicken pieces
  • 1onion
  • 2carrots
  • 1.8 Lwater
  • 2 tbspolive oil
  • 1bay leaf
  • to tastefine sea salt and black pepper

Method

  1. In a large, heavy-bottomed pot, heat 2 tablespoons of olive oil over medium heat. Once the oil is shimmering, add 1 finely chopped onion. Stir occasionally, allowing the onion to soften and turn translucent, which should take about 5 minutes. Be careful not to let it brown, as this will affect the broth's flavor.
  2. Add 700 g of chicken pieces to the pot. Stir them with the softened onions, ensuring each piece is coated in the oil and onion mixture. Cook until the chicken pieces turn opaque on the outside, which indicates they are starting to cook through.
  3. Peel and slice 2 carrots into rounds and add them to the pot. Stir to combine with the chicken and onions. The carrots will add a subtle sweetness to the broth as they cook.
  4. Pour in 1.8 liters of water, ensuring all ingredients are submerged. Add 1 bay leaf for an aromatic depth. Increase the heat to high and bring the mixture to a gentle boil.
  5. Once boiling, reduce the heat to low to maintain a simmer. Let the broth simmer gently, uncovered, for about 45 minutes. During this time, the chicken should become tender and the flavors will meld together.
  6. After simmering, check the chicken for doneness; it should be tender and easily come apart with a fork. Taste the broth and season with fine sea salt and black pepper to your preference. The broth should taste balanced, with a hint of sweetness from the carrots and a depth from the bay leaf.
  7. Remove the bay leaf before serving. Optionally, finish the broth with a drizzle of olive oil for a richer texture. Serve hot, sharing the warmth and comfort of this home-cooked Indian chicken broth.
