Indian Lentil Pot 2

Indian Lentil Pot 2 is a cherished staple in Indian home kitchens, capturing the essence of everyday cooking. It's a dish that finds its place on the table during weeknight dinners, offering warmth and comfort through its simplicity and nourishing ingredients. Prepared with the intuition of a home cook, it reflects the art of seasoning by hand and the generous use of fats that characterize authentic Indian home cooking.

This lentil dish should taste light yet satisfying, with the earthy undertones of red lentils complemented by the aromatic presence of cumin and garlic. The acidity of lemon brightens each spoonful, while the smooth texture of the lentils provides a soothing mouthfeel. Salt and black pepper, added to taste, round out the flavors, making it a dish meant for sharing and savoring.

Ingredients

  • 300 gred lentils
  • 1onion — chopped
  • 2 clovesgarlic
  • 1 tspcumin
  • 1.5 Lwater
  • 1 tbspolive oil
  • 1lemon — juiced
  • to tastefine sea salt and black pepper

Method

  1. Begin by finely chopping 1 onion and mincing 2 cloves of garlic. In a large, heavy-bottomed pot, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic to the pot, stirring occasionally. Cook until the onion becomes translucent and the garlic releases its aroma, ensuring they do not brown, which would alter the flavor profile.
  2. Once the aromatics are softened, add 1 teaspoon of cumin to the pot. Stir the mixture for about a minute to allow the cumin to release its essential oils, enhancing the fragrance of the base.
  3. Rinse 300 g of red lentils under cold water until the water runs clear. Add the rinsed lentils to the pot, stirring to coat them in the aromatic mixture. This step ensures the lentils absorb the flavors from the start.
  4. Pour in 1.5 liters of water, stirring to combine with the lentils and aromatics. Increase the heat to bring the mixture to a gentle boil, then reduce the heat to low to maintain a simmer. Cover the pot partially with a lid, allowing steam to escape, and let the lentils cook until they are tender and have absorbed most of the water, resulting in a creamy texture.
  5. Once the lentils are cooked to your desired consistency, season the dish with fine sea salt and black pepper to taste. Stir well to distribute the seasoning evenly throughout the pot.
  6. Finish the dish by squeezing the juice of 1 lemon over the lentils, stirring it in to brighten the flavors. Taste once more and adjust the seasoning if necessary. Serve the Indian Lentil Pot 2 warm, ready to be shared at the table.
