Ingredients

  • 300 gred lentils
  • 1onion — chopped
  • 2 clovesgarlic
  • 1 tspcumin
  • 1.5 Lwater
  • 1 tbspolive oil
  • 1lemon — juiced
  • to tastefine sea salt and black pepper

Method

  1. Start by finely chopping 1 onion and mincing 2 cloves of garlic. In a large pot, heat 1 tablespoon of olive oil over medium heat. Once the oil shimmers, add the chopped onion and garlic. Stir frequently, cooking until the onion becomes translucent and the garlic releases its aroma, but ensure they do not brown.
  2. Add 1 teaspoon of cumin to the pot, stirring it into the softened onions and garlic. Allow the cumin to toast for about a minute, which will deepen its flavor and release its fragrance.
  3. Rinse 300 g of red lentils under cold water until the water runs clear. Add the rinsed lentils to the pot, stirring to coat them in the aromatic mixture.
  4. Pour in 1.5 liters of water, stirring to combine. Increase the heat to bring the mixture to a gentle boil, then reduce the heat to low. Cover the pot with a lid, leaving a small gap for steam to escape, and let it simmer.
  5. Simmer the lentils until they are tender and have absorbed most of the liquid, which will take on a creamy consistency. The lentils should be soft to the touch and easily mashed with the back of a spoon.
  6. Once the lentils are cooked, season with fine sea salt and black pepper to taste. Stir well to ensure the seasoning is evenly distributed.
  7. Finish the dish by squeezing the juice of 1 lemon into the pot, stirring to incorporate the citrus brightness. Serve the Indian Lentil Pot 3 warm, with a drizzle of olive oil on top if desired, ready to be shared at the table.
