Ingredients

  • 300 gred lentils
  • 1onion — chopped
  • 2 clovesgarlic
  • 1 tspcumin
  • 1.5 Lwater
  • 1 tbspolive oil
  • 1lemon — juiced
  • to tastefine sea salt and black pepper

Method

  1. Begin by finely chopping 1 onion and mincing 2 cloves of garlic. In a large, heavy-bottomed pot, heat 1 tablespoon of olive oil over medium heat. Once the oil shimmers, add the chopped onion and garlic. Stir frequently, allowing them to soften and become translucent without browning, which should take about 5 minutes. This step builds a fragrant base essential for the dish's depth of flavor.
  2. Add 1 teaspoon of cumin to the softened onions and garlic. Stir continuously for about 1 minute, allowing the cumin to release its aroma and infuse the oil. This will deepen the flavor profile of the dish, creating a warm, earthy undertone.
  3. Rinse 300 g of red lentils under cold water until the water runs clear. Add the rinsed lentils to the pot, stirring to coat them in the aromatic mixture. This ensures that the lentils absorb the flavors from the start.
  4. Pour in 1.5 liters of water and increase the heat to high until the mixture comes to a gentle boil. Once boiling, reduce the heat to low and cover the pot. Allow the lentils to simmer gently, stirring occasionally, until they are tender and have absorbed most of the liquid, about 20-25 minutes. The lentils should be soft and creamy, with a slight thickening of the liquid.
  5. Once the lentils have reached the desired texture, season the pot with fine sea salt and black pepper to taste. Stir well to distribute the seasoning evenly throughout the dish.
  6. Cut 1 lemon in half and squeeze its juice into the pot, being careful to catch any seeds. Stir the lemon juice into the lentils, which will brighten the flavors and add a subtle tang.
