Ingredients

  • 600 gbeef shank — cubed
  • 1onion
  • 2carrots
  • 1.8 Lbeef broth
  • 2 tbspoil
  • to tastefine sea salt and black pepper

Method

  1. Begin by preparing your ingredients. Slice 1 onion into thin wedges and peel and cut 2 carrots into large chunks. This will allow the vegetables to release their flavors into the soup as they cook.
  2. In a large pot, heat 2 tablespoons of oil over medium heat. Once the oil is shimmering, add the sliced onions. Stir frequently and cook until the onions become translucent and fragrant, about 5 minutes. Be careful not to let them brown, as this could alter the soup's flavor.
  3. Add the 600 g of beef shank to the pot. Sear the beef on all sides until it develops a deep brown crust, which should take about 3-4 minutes per side. This step is crucial as it adds a rich depth to the broth.
  4. Pour in 1.8 L of beef broth and add the carrot chunks. Bring the mixture to a gentle simmer. The broth should just barely bubble around the edges, which allows the flavors to meld without becoming cloudy.
  5. Reduce the heat to low and cover the pot. Let the soup simmer for about 1.5 to 2 hours, or until the beef is tender and the carrots are soft. The beef should easily pull apart with a fork, indicating it is done.
  6. Once the soup has simmered, taste and season with fine sea salt and black pepper to your preference. This step is essential to balance the flavors.
  7. Ladle the soup into bowls and serve immediately. This dish is best enjoyed hot, with the beef tender and the broth rich and savory.
