Method

  1. Begin by preparing your ingredients. Peel and roughly chop 1 onion and 2 carrots into large chunks. These will form the aromatic base of your soup and should be cut large enough to withstand a long simmer without disintegrating.
  2. In a large, heavy-bottomed pot, heat 2 tablespoons of oil over medium heat. Once the oil shimmers, add the chopped onion and carrots. Stir occasionally, allowing them to soften and release their aromas without browning. This should take about 5 to 7 minutes, and you'll notice a sweet, earthy fragrance filling your kitchen.
  3. Add the 600 g of beef shank to the pot. Sear the meat on all sides until it develops a deep brown crust. This step is crucial as it enhances the flavor of the broth. The meat should be evenly browned, which will take about 8 to 10 minutes.
  4. Pour in 1.8 liters of beef broth, ensuring the meat and vegetables are fully submerged. Bring the mixture to a gentle boil over medium-high heat. Once boiling, reduce the heat to low, cover the pot, and let it simmer. The beef should become tender and the broth rich and flavorful, which will take approximately 1.5 to 2 hours.
  5. Check the texture of the beef by piercing it with a fork; it should be tender and easy to pull apart. If not, continue simmering, checking every 15 minutes. The broth should be clear and aromatic, with a deep, savory scent.
  6. Season the soup with fine sea salt and black pepper to taste. Stir well and let the flavors meld for an additional 5 minutes. The seasoning should enhance the natural flavors of the beef and vegetables without overpowering them.
