  2. In a large, heavy-bottomed pot, heat 2 tablespoons of oil over medium heat. Once the oil is shimmering, add the chopped onion and carrots. Stir occasionally and cook until the onion becomes translucent and the carrots start to soften, about 5-7 minutes. This step builds the aromatic base of the soup.
  3. Add 600 g of beef shank to the pot. Allow the meat to brown slightly on all sides, which will enhance the flavor of the broth. This should take about 5 minutes, and you'll notice a rich aroma developing as the beef sears.
