Ingredients

  • 300 gred lentils
  • 1onion — chopped
  • 2 clovesgarlic
  • 1 tspcumin
  • 1.5 Lwater
  • 1 tbspolive oil
  • 1lemon — juiced
  • to tastefine sea salt and black pepper

Method

  1. Begin by finely chopping 1 onion and mincing 2 cloves of garlic. Heat 1 tablespoon of olive oil in a large pot over medium heat. Once the oil is shimmering, add the onion and garlic. Stir frequently, cooking until the onion becomes translucent and the garlic is fragrant, about 5 minutes. Be careful not to let them brown, as this could impart a bitter taste.
  2. Stir in 1 teaspoon of cumin, allowing it to toast in the oil for about 1 minute. This step releases the spice's essential oils, enhancing its flavor. You should notice a warm, earthy aroma filling the kitchen.
  3. Rinse 300 g of red lentils under cold water until the water runs clear to remove any dust or debris. Add the lentils to the pot, stirring to coat them in the aromatic base. This ensures that the lentils absorb the flavors from the start.
  4. Pour in 1.5 liters of water and bring the mixture to a gentle boil over medium-high heat. Once boiling, reduce the heat to low, cover the pot, and let it simmer. Stir occasionally to prevent the lentils from sticking to the bottom. The lentils are done when they are soft and have absorbed most of the liquid, creating a creamy consistency.
  5. Cut 1 lemon in half and squeeze its juice into the pot, being careful to catch any seeds. Stir well to incorporate the citrus, which brightens the flavors and balances the richness of the lentils.
  6. Season the dish with fine sea salt and black pepper to taste. Start with a small amount, then adjust as needed, tasting after each addition. The salt should enhance the flavors without overpowering them.
  7. Finish by drizzling a little more olive oil over the top before serving. This adds a touch of richness and a glossy finish to the dish. Serve hot, ideally with warm bread for dipping, and enjoy the communal spirit of Middle Eastern dining.
