Ingredients

  • 400 gmixed vegetables — carrot celery potato
  • 1onion
  • 1.5 Lvegetable broth
  • 2 tbspolive oil
  • to tastefine sea salt and black pepper

Method

  1. Begin by finely chopping 1 onion. In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion to the pot, stirring occasionally. Cook until the onion becomes translucent and releases a sweet aroma, ensuring it does not brown.
  2. Prepare 400 g of mixed vegetables by cutting them into uniform, bite-sized pieces. This ensures even cooking. Add the vegetables to the pot, stirring to coat them in the oil and onion mixture. Allow them to cook for a few minutes until they start to soften slightly.
  3. Pour in 1.5 liters of vegetable broth, stirring to combine with the vegetables. Increase the heat to bring the mixture to a gentle simmer. Once simmering, reduce the heat to maintain a gentle bubble, allowing the flavors to meld together.
  4. Continue to simmer the soup until the vegetables reach a tender consistency, where they can be easily pierced with a fork but still hold their shape. This texture indicates they are cooked through without being mushy.
  5. Season the soup with fine sea salt and black pepper to taste, stirring well to distribute the seasoning evenly. Before serving, taste the soup and adjust the seasoning if necessary. Finish by drizzling a thread of olive oil over the top for added richness and a hint of fresh flavor.
