Ingredients

  • 600 gbeef shank — cubed
  • 1onion
  • 2carrots
  • 1.8 Lbeef broth
  • 2 tbspoil

Method

  1. Begin by heating 2 tablespoons of oil in a large, heavy-bottomed pot over medium heat. Once the oil shimmers, add 1 finely chopped onion. Stir occasionally, allowing the onion to soften and turn translucent, which should take about 5 to 7 minutes. Be careful not to let the onion brown, as this can impart a bitter taste to the soup.
  2. Next, add 600 g of beef shank to the pot. Sear the meat on all sides until it develops a rich, brown crust. This step is crucial for building depth of flavor in the broth. The beef should be browned but not cooked through at this point.
  3. Peel and slice 2 carrots into rounds and add them to the pot. Stir them with the beef and onions for about 2 minutes. This brief cooking will start to release their sweetness and help them blend into the soup.
  4. Pour in 1.8 liters of beef broth, ensuring that the beef and vegetables are fully submerged. Increase the heat to high and bring the mixture to a gentle boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer. The soup should develop a rich aroma, and the beef should become tender, which can take up to 1.5 to 2 hours.
  5. Check the tenderness of the beef by piercing it with a fork; it should easily slide in and out. Taste the broth and adjust the seasoning with fine sea salt and black pepper to your preference. This step is essential to balance the flavors and enhance the natural taste of the ingredients.
