Ingredients

  • 600 gbeef shank — cubed
  • 1onion
  • 2carrots
  • 1.8 Lbeef broth
  • 2 tbspoil
  • to tastefine sea salt and black pepper

Method

  1. In a large, heavy-bottomed pot, heat 2 tablespoons of oil over medium heat. Once the oil shimmers, add 1 finely chopped onion. Stir occasionally, allowing the onion to soften and become translucent, which should take about 5 minutes. Be careful not to let the onion brown, as this will affect the soup's flavor.
  2. Add the 600 g of beef shank to the pot. Sear the meat on all sides until it develops a light brown crust. This step enhances the depth of flavor in the soup. Ensure that the meat is evenly browned but not cooked through.
  3. Peel and slice 2 carrots into rounds and add them to the pot. Stir them with the beef and onions, allowing the carrots to begin softening. This step ensures that the carrots will be tender by the time the soup is finished.
  4. Pour in 1.8 L of beef broth, ensuring that the beef and vegetables are fully submerged. Increase the heat to high until the broth begins to boil, then reduce to a gentle simmer. Cover the pot partially with a lid, leaving a small gap for steam to escape.
  5. Simmer the soup for about 1.5 to 2 hours, or until the beef is tender and easily pulls apart with a fork. The broth should be rich and flavorful, with the carrots fully cooked and soft.
  6. Taste the soup and season with fine sea salt and black pepper to your preference. Stir well to ensure the seasoning is evenly distributed. If desired, finish with a drizzle of oil for added richness before serving.
