Olive oil adds a smooth, gentle layer to the broth, while the onion brings warmth. Ingredients

  • 700 gchicken pieces
  • 1onion
  • 2carrots
  • 1.8 Lwater
  • 2 tbspolive oil
  • 1bay leaf
  • to tastefine sea salt and black pepper

Method

  1. In a large pot, heat 2 tablespoons of olive oil over medium heat. Add 1 finely chopped onion and cook until it becomes translucent and soft, stirring occasionally to prevent browning. This step builds the fragrant base for the broth, ensuring the onion releases its sweetness without burning.
  2. Add 700 g of chicken pieces to the pot, stirring them into the softened onions. Allow the chicken to sear slightly, turning occasionally until the exterior is no longer pink. This step helps to lock in the chicken's flavor, enhancing the depth of the broth.
  3. Introduce 2 peeled and chopped carrots into the pot, stirring them in with the chicken and onions. The carrots will add a subtle sweetness and color to the broth, complementing the savory elements.
  4. Pour in 1.8 liters of water, ensuring all ingredients are submerged. Add 1 bay leaf for an aromatic depth. Increase the heat to high and bring the mixture to a gentle boil.
  5. Once boiling, reduce the heat to low and cover the pot. Allow the broth to simmer gently. The chicken should become tender, and the carrots should soften, releasing their flavors into the broth. This simmering process melds all the ingredients into a cohesive, flavorful broth.
  6. After the broth has developed its flavors, taste and season with fine sea salt and black pepper to your liking. Adjust the seasoning gradually, as this is key to achieving the perfect balance.
  7. Finish the broth by removing the bay leaf. Optionally, drizzle a small thread of olive oil over the top for added richness. Serve the broth hot, ready to be shared around the table, embodying the spirit of Pakistani home cooking.
