This home-cooked version captures the essence of family meals, where salt is judged by instinct and rich fats are embraced with generosity. It’s a dish that finds its place on the table during everyday dinners, offering warmth and comfort in its simplicity.

The broth should be a warm embrace, with the subtle sweetness of carrots and the depth of chicken mingling in harmony. A hint of bay leaf adds a whisper of earthiness, while the olive oil ensures a silken finish. Seasoned with just the right touch of fine sea salt and black pepper, it’s an uncomplicated yet deeply satisfying bowl of goodness.

Ingredients

  • 700 gchicken pieces
  • 1onion
  • 2carrots
  • 1.8 Lwater
  • 2 tbspolive oil
  • 1bay leaf
  • to tastefine sea salt and black pepper

Method

  1. Begin by heating 2 tablespoons of olive oil in a large pot over medium heat. Once the oil is shimmering, add 1 finely chopped onion. Stir occasionally, allowing the onion to soften and become translucent, but ensure it does not brown, as this will affect the broth's flavor.
  2. Add 700 grams of chicken pieces to the pot. Stir them gently with the onions, letting the chicken sear slightly on all sides. This step helps to develop a deeper flavor in the broth.
  3. Introduce 2 peeled and chopped carrots into the pot. Stir them in, allowing the carrots to mingle with the chicken and onions. This step ensures the carrots start to release their sweetness into the base.
  4. Pour in 1.8 liters of water, making sure the chicken and vegetables are fully submerged. Add 1 bay leaf to the pot. Increase the heat to bring the mixture to a gentle simmer, then reduce the heat to maintain a low simmer. This slow cooking allows the flavors to meld without boiling away the delicate aromas.
  5. Let the broth simmer gently until the chicken is cooked through and the vegetables are tender. The chicken should be opaque and easily pulled apart with a fork, while the carrots should be soft but not mushy.
  6. Taste the broth and season with fine sea salt and black pepper to your preference. The salt should enhance the natural flavors without overpowering them. If desired, finish with a drizzle of olive oil for added richness before serving.
