Each family has its own cherished way of preparing this dish, often with a sprinkle of shared wisdom and a handful of generously judged salt. Unlike its restaurant counterparts, this version is a staple of home, resonating with the everyday comfort and vibrant spirit of Pakistani family tables.

The dish offers a symphony of textures and flavors, with tender red lentils absorbing the deep, savory notes of cumin and the warmth of sauteed onion and garlic. A squeeze of lemon adds a bright, citrusy finish, balanced by the subtle heat of black pepper. It's a dish meant for sharing, where every spoonful brings the warmth and generosity of a Pakistani home.

Ingredients

  • 300 gred lentils
  • 1onion — chopped
  • 2 clovesgarlic
  • 1 tspcumin
  • 1.5 Lwater
  • 1 tbspolive oil
  • 1lemon — juiced
  • to tastefine sea salt and black pepper

Method

  1. Begin by finely chopping 1 onion and mincing 2 cloves of garlic. Heat 1 tablespoon of olive oil in a large pot over medium heat. Once the oil shimmers, add the onion and garlic, stirring frequently. Cook until the onion turns translucent and the garlic is fragrant, ensuring they do not brown, which would alter the flavor profile of the dish.
  2. Add 1 teaspoon of cumin to the softened aromatics, stirring for about 30 seconds until the cumin releases its aroma. This step is crucial for building the base flavor of the dish.
  3. Rinse 300 g of red lentils under cold water until the water runs clear. Add the rinsed lentils to the pot, stirring to coat them with the aromatic mixture.
  4. Pour in 1.5 L of water and increase the heat to bring the mixture to a gentle boil. Once boiling, reduce the heat to low and let it simmer. Stir occasionally, watching for the lentils to soften and begin to break down, which should create a creamy texture.
  5. As the lentils cook, check the consistency. The dish is ready when the lentils are tender and have absorbed most of the water, creating a thick, stew-like consistency.
  6. Season the lentil pot with fine sea salt and black pepper to taste. Squeeze the juice of 1 lemon into the pot, stirring well to incorporate the citrus, which will brighten the flavors.
  7. Finish by drizzling a thread of olive oil over the top before serving. This adds a rich, glossy finish to the dish, enhancing both flavor and presentation.
