This dish is a staple in everyday home cooking, crafted with a careful hand that measures salt by feel and uses fat without restraint. It reflects the heart of Pakistani home kitchens, where recipes are passed down in practice rather than on paper, creating a communal experience that connects family and friends over a shared meal.

Expect a silky texture with each spoonful, as red lentils dissolve into a fragrant broth, subtly spiced with cumin and brightened by a squeeze of lemon. Each bowl offers a delicate balance of earthiness from lentils and a gentle heat from black pepper, making it a perfect dish for dipping warm flatbreads or simply enjoying on its own.

Ingredients

  • 300 gred lentils
  • 1onion — chopped
  • 2 clovesgarlic
  • 1 tspcumin
  • 1.5 Lwater
  • 1 tbspolive oil
  • 1lemon — juiced
  • to tastefine sea salt and black pepper

Method

  1. Begin by finely chopping 1 onion and mincing 2 cloves of garlic. In a large pot, heat 1 tablespoon of olive oil over medium heat. Once the oil is shimmering, add the chopped onion and garlic. Stir occasionally, cooking until the onion becomes translucent and the garlic is fragrant, ensuring they do not brown.
  2. Sprinkle 1 teaspoon of cumin into the pot, stirring it into the softened onions and garlic. Allow the cumin to toast for about a minute, which will release its aromatic oils and enhance the flavor base of the dish.
  3. Rinse 300 g of red lentils under cold water until the water runs clear. Add the rinsed lentils to the pot, stirring them to coat with the aromatic mixture. This step helps the lentils absorb the flavors from the base.
  4. Pour in 1.5 liters of water, stirring to combine everything in the pot. Increase the heat to bring the mixture to a gentle boil, then reduce to a simmer. Cover the pot partially with a lid, allowing steam to escape, and let the lentils cook, stirring occasionally.
  5. Simmer the lentils until they become soft and start to break down, creating a creamy texture. This should take about 20 to 30 minutes, but the key is the texture: the lentils should be tender and the mixture should have thickened slightly.
  6. Once the lentils have reached the desired consistency, taste and season with fine sea salt and black pepper to your preference. Cut a lemon in half and squeeze the juice into the pot, stirring well to incorporate the citrusy brightness into the dish.
  7. Finish the dish with an additional drizzle of olive oil if desired, enhancing the richness of the lentils. Serve the Pakistani Lentil Pot hot, ideally with naan or rice, and enjoy the comforting, shared meal.
