Ingredients

  • 400 gmixed vegetables — carrot celery potato
  • 1onion
  • 1.5 Lvegetable broth
  • 2 tbspolive oil
  • to tastefine sea salt and black pepper

Method

  1. In a large pot, heat 2 tablespoons of olive oil over medium heat. Once the oil is shimmering, add 1 finely chopped onion. Stir occasionally and cook until the onion becomes translucent and soft, releasing a sweet aroma, but ensure it does not brown, which would impart a bitter taste.
  2. Add 400 g of mixed vegetables to the pot. These can include carrots, peas, potatoes, and green beans, cut into bite-sized pieces. Stir the vegetables to coat them in the oil and onion mixture, allowing them to start softening and absorbing the flavors.
  3. Pour in 1.5 L of vegetable broth, ensuring that the vegetables are fully submerged. Increase the heat to bring the mixture to a gentle simmer. This will allow the flavors to meld together while the vegetables cook through.
  4. Let the soup simmer until the vegetables are tender but not mushy. You can test this by piercing a piece of potato with a fork; it should slide in easily but the potato should hold its shape.
  5. Season the soup with fine sea salt and black pepper to taste. Stir well and taste again, adjusting the seasoning as needed to balance the flavors. If desired, finish with a drizzle of olive oil for added richness before serving.
