Ingredients

  • 600 gbeef shank — cubed
  • 1onion
  • 2carrots
  • 1.8 Lbeef broth
  • 2 tbspoil
  • to tastefine sea salt and black pepper

Method

  1. Begin by heating 2 tablespoons of oil in a large, heavy-bottomed pot over medium heat. Once the oil shimmers, add 1 finely chopped onion. Stir occasionally, cooking until the onion becomes translucent and soft, releasing its sweet aroma, about 5 minutes. Be careful not to let the onion brown, as this would alter the soup's delicate flavor.
  2. Next, introduce the 600 g of beef shank to the pot. Sear the beef on all sides until it develops a light brown crust, which should take about 5-7 minutes. This step is crucial as it locks in the meat's juices and enhances the soup's depth of flavor.
  3. Add 2 peeled and sliced carrots to the pot. Stir them with the beef and onions, allowing the carrots to begin softening. This ensures they will cook evenly and contribute their natural sweetness to the broth.
  4. Pour in 1.8 liters of beef broth, ensuring the beef and vegetables are fully submerged. Increase the heat to bring the mixture to a gentle boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer. The soup should cook until the beef is tender and easily pulls apart with a fork, and the carrots are soft but not mushy, which typically takes 1.5 to 2 hours.
  5. Once the soup has reached the desired texture, season it with fine sea salt and black pepper to taste. Stir well to ensure the seasoning is evenly distributed. Taste the soup, adjusting the seasoning if necessary, to ensure a balanced and flavorful broth.
