Persian Beef Broth Soup 3 finds its place in the everyday rhythm of Persian home cooking, where the essence of comfort is distilled into a pot. This version skips the formalities of restaurant fare, embracing the unmeasured, intuitive touch of family kitchens. The soup is a staple at tables where warmth is shared just as generously as food, and where hospitality is measured in bowls filled and refilled.

The soup should envelop you with its hearty aroma, the beef shank lending a robust richness, while onions and carrots melt into the broth, creating a harmonious depth. A touch of fine sea salt and freshly cracked black pepper are the only embellishments needed, a nod to the dish's simplicity and sincerity.

Ingredients

  • 600 gbeef shank — cubed
  • 1onion
  • 2carrots
  • 1.8 Lbeef broth
  • 2 tbspoil
  • to tastefine sea salt and black pepper

Method

  1. Begin by preparing the aromatics. Peel and finely chop 1 onion. In a large, heavy-bottomed pot, heat 2 tablespoons of oil over medium heat. Add the chopped onion and cook, stirring occasionally, until the onion becomes translucent and fragrant, about 5 to 7 minutes. Ensure the onion softens without browning to build a gentle, sweet base for the soup.
  2. While the onion is cooking, peel and slice 2 carrots into rounds about 1/4 inch thick. Once the onion is ready, add the carrots to the pot. Stir them into the onions and cook for another 3 to 4 minutes until the carrots start to soften slightly, releasing their natural sweetness.
  3. Next, add 600 g of beef shank to the pot. Allow the beef to sear lightly on each side, turning occasionally until it is browned. This step is crucial for developing a deep, rich flavor in the soup.
  4. Pour in 1.8 L of beef broth, ensuring the beef and vegetables are fully submerged. Increase the heat to bring the broth to a gentle simmer. Once simmering, reduce the heat to low, cover the pot, and let it cook slowly. The beef should become tender and the flavors meld together, which will take about 1 to 1.5 hours. You’ll know it’s ready when the beef is tender enough to be easily shredded with a fork.
  5. Once the beef is tender, taste the soup and season with fine sea salt and black pepper to your liking. Adjust the seasoning gradually, as the flavors will continue to develop as the soup rests. If desired, finish with a drizzle of oil for added richness and serve hot, inviting everyone to share in this comforting dish.
