Persian Chicken Broth

Persian Chicken Broth is a cornerstone of home cooking, simmered in kitchens across Iran with a practiced hand. The broth should be a delicate balance of savory and aromatic, with the gentle sweetness of carrots and the subtle earthiness of bay leaf infusing the chicken's richness. A touch of olive oil adds depth, while salt and pepper are adjusted by intuition, not measure. Sip it slowly, savoring the warmth that only a well-cooked broth can bring.

Ingredients

  • 700 gchicken pieces
  • 1onion
  • 2carrots
  • 1.8 Lwater
  • 2 tbspolive oil
  • 1bay leaf
  • to tastefine sea salt and black pepper

Method

  1. Start by preparing your aromatics. Peel and finely chop 1 onion. In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and cook, stirring occasionally, until the onion becomes translucent and soft, about 5 to 7 minutes. Be careful not to let the onion brown, as this can alter the flavor of the broth.
  2. While the onion is cooking, peel and slice 2 carrots into rounds about 1 cm thick. Once the onion is ready, add the carrot slices to the pot. Stir them together with the onion, allowing the carrots to begin softening for about 3 minutes. This step helps build a sweet and aromatic base for your broth.
  3. Next, add 700 g of chicken pieces to the pot. Stir to coat the chicken in the aromatic mixture, letting it cook for about 5 minutes until the chicken pieces begin to turn opaque. This initial cooking helps to seal in the chicken's flavor.
  4. Pour in 1.8 liters of water, ensuring that all the ingredients are submerged. Add 1 bay leaf to the pot. Increase the heat to high and bring the mixture to a gentle boil. This step infuses the broth with the flavors of the chicken and aromatics.
  5. Once boiling, reduce the heat to low to maintain a gentle simmer. Cover the pot partially with a lid, allowing steam to escape. Let the broth simmer for about 45 minutes, or until the chicken is tender and the flavors have melded. The broth should have a rich aroma and a clear, golden color.
  6. As the broth simmers, taste it occasionally and season with fine sea salt and black pepper to your preference. The salt will enhance the natural flavors of the chicken and vegetables. Adjust the seasoning gradually, tasting as you go to avoid over-salting.
  7. Once the chicken is tender and the broth is flavorful, remove the bay leaf and any large pieces of chicken if desired. You can shred the chicken to serve in the broth or leave it in larger pieces. Finish the broth with a final drizzle of olive oil for richness, and serve it warm, inviting everyone to share in this comforting dish.
