Persian Vegetable Soup

Ingredients

  • 400 gmixed vegetables — carrot celery potato
  • 1onion
  • 1.5 Lvegetable broth
  • 2 tbspolive oil
  • to tastefine sea salt and black pepper

Method

  1. Begin by finely chopping 1 onion. Heat 2 tablespoons of olive oil in a large pot over medium heat. Once the oil is shimmering, add the chopped onion. Stir occasionally, cooking until the onion becomes translucent and releases a sweet aroma, taking care not to let it brown.
  2. Prepare 400 g of mixed vegetables, cutting them into bite-sized pieces. Add them to the pot, stirring to coat them in the oil and onion mixture. Allow the vegetables to cook for a few minutes, just until they start to soften slightly and their colors become more vibrant.
  3. Pour in 1.5 liters of vegetable broth, stirring to combine with the vegetables. Increase the heat to bring the mixture to a gentle simmer. Once simmering, reduce the heat to maintain a gentle bubble, ensuring the vegetables cook evenly without becoming mushy.
  4. Continue simmering the soup, stirring occasionally, until the vegetables are tender yet still retain a slight bite. The broth should have a rich aroma, and the vegetables should be easily pierced with a fork but not falling apart.
  5. Taste the soup and season with fine sea salt and black pepper to your preference. Consider the balance of flavors, adding more seasoning if needed. Finish the soup with a drizzle of olive oil for richness and serve it warm, inviting everyone to gather around the table and enjoy.
