The seasoning mix is a symphony of garlic powder, black pepper, bay leaf flakes, fine sea salt, and oregano. Each spoonful offers a harmonious blend of savory and earthy notes, rounded out by the gentle warmth of black pepper. The bay leaf and oregano add a subtle aromatic quality, making every bite reminiscent of the slow-cooked adobo you love. Use liberally to bring a taste of the Philippines to your dishes.

Ingredients

  • 2 tbspgarlic powder
  • 2 tbspblack pepper
  • 1 tbspbay leaf flakes
  • 1 tbspfine sea salt
  • 1 tsporegano

Method

  1. In a dry skillet, add 2 tablespoons of garlic powder, 2 tablespoons of black pepper, 1 tablespoon of bay leaf flakes, 1 tablespoon of fine sea salt, and 1 teaspoon of oregano. Place the skillet over medium heat and stir the spices gently with a wooden spoon. Toast the mixture until you notice a fragrant aroma rising from the pan, which should take about 3 to 5 minutes. Be careful not to let the spices burn, as this will impart a bitter taste.
  2. Once the spices are fragrant, remove the skillet from the heat and transfer the mixture to a large plate or a shallow bowl. Spread the spices out evenly to allow them to cool completely. This cooling step is crucial to prevent moisture from forming when you store the mix, which can lead to clumping and spoilage.
  3. After the spices have cooled, you can choose to grind them for a finer texture or simply mix them thoroughly to ensure an even distribution of flavors. If grinding, use a spice grinder or a mortar and pestle, pulsing or crushing until you achieve your desired consistency.
  4. Transfer the blended or ground adobo seasoning mix into an airtight container, such as a glass jar with a tight-fitting lid. Ensure the container is clean and dry to prevent any moisture from affecting the mix.
  5. Store the airtight container in a cool, dark place, like a pantry or cupboard, away from direct sunlight. This will help preserve the potency and aroma of the spices.
