This warm spice blend, a staple in many Iranian households, is often prepared in anticipation of family meals or festive gatherings. It is a harmonious blend of spices that elevates simple ingredients into something truly special, carrying with it a legacy of flavors passed down through generations.

The aroma of Advieh is a comforting embrace, with cinnamon's warmth, cardamom's floral notes, and cumin's earthiness, rounded out by nutmeg's subtle spice and a touch of sea salt. Ingredients

  • 2 tbspground cinnamon
  • 1 tbspground cardamom
  • 1 tbspground cumin
  • 1 tspnutmeg
  • 1 tbspfine sea salt

Method

  1. Begin by setting a small, dry skillet over low heat. Add 2 tbsp ground cinnamon, 1 tbsp ground cardamom, 1 tbsp ground cumin, and 1 tsp nutmeg to the skillet. Stir the spices continuously with a wooden spoon to ensure even toasting. You'll know the spices are ready when they release a warm, fragrant aroma, which should take about 3 to 5 minutes. Be careful not to let them burn, as this will make them bitter.
  2. Once the spices are toasted, remove the skillet from the heat and transfer the spices to a wide plate to cool completely. This step is crucial as grinding warm spices can lead to clumping and uneven texture.
  3. After the spices have cooled, combine them with 1 tbsp fine sea salt in a spice grinder or mortar and pestle. Grind or mix until the blend is evenly combined and has a uniform texture. The salt helps to enhance the flavors and acts as a preservative.
  4. Transfer the Advieh Spice Blend to an airtight container, such as a glass jar with a tight-fitting lid. Store the container in a cool, dark place, like a pantry or cupboard, to protect the spices from light and moisture, which can degrade their flavor.
  5. For optimal aroma and flavor, use the Advieh Spice Blend within a few months. This blend is perfect for adding warmth and depth to rice dishes and stews, infusing them with the essence of Persian cuisine.
