American House Rub 2 is a pantry staple for the modern American kitchen, providing a versatile seasoning that transforms weeknight dinners into something special. Expect a harmonious balance of earthy cumin and smoky paprika, with a subtle kick from black pepper and a hint of citrusy coriander. The fine sea salt ties it all together, enhancing each flavor without overpowering. This rub is designed to add complexity and a gentle heat, making it an essential addition to your spice cabinet.

Ingredients

  • 2 tbspground cumin
  • 2 tbsppaprika
  • 1 tbspground coriander
  • 1 tspblack pepper
  • 1 tbspfine sea salt

Method

  1. Place a small, dry skillet over medium-low heat. Add 2 tablespoons of ground cumin, 2 tablespoons of paprika, 1 tablespoon of ground coriander, and 1 teaspoon of black pepper to the skillet. Stir the spices continuously with a wooden spoon to ensure even toasting. You'll know they're ready when the aroma becomes rich and the spices slightly darken in color, which should take about 2 to 3 minutes.
  2. Remove the skillet from the heat and immediately transfer the toasted spices to a large plate or a shallow bowl. This helps them cool quickly and prevents further cooking from residual heat in the pan. Allow the spices to cool completely before proceeding to the next step.
  3. Once the spices are cooled, combine them with 1 tablespoon of fine sea salt in a bowl. If you prefer a finer texture, you can use a spice grinder or mortar and pestle to grind the mixture until it reaches your desired consistency. Ensure the spices and salt are evenly mixed for a balanced flavor profile.
  4. Transfer the finished spice blend into an airtight container, such as a glass jar with a tight-fitting lid. Store the container in a cool, dark place, like a pantry or cupboard, to protect the spices from light and moisture.
  5. For optimal flavor, use the American House Rub 2 within a few months. Over time, the potency of the spices may diminish, so it's best to make smaller batches if you don't plan to use it frequently.
