The blend brings together the earthy sweetness of cinnamon and the floral notes of cardamom, underscored by the gentle heat of black pepper. Cloves add a hint of bold warmth, while a touch of fine sea salt rounds out the flavors. Ingredients

  • 2 tbspcinnamon
  • 1 tbspcardamom
  • 1 tspcloves
  • 1 tspblack pepper
  • 1 tspfine sea salt

Method

  1. Place a small, dry skillet on the stove over medium heat. Add 2 tablespoons of cinnamon, 1 tablespoon of cardamom, 1 teaspoon of cloves, and 1 teaspoon of black pepper directly into the skillet. Stir the spices constantly with a wooden spoon to ensure even toasting. You'll know they're ready when the aroma becomes rich and the spices darken slightly in color.
  2. Remove the skillet from the heat and transfer the toasted spices to a plate or a cool, flat surface. Allow them to cool completely, which will prevent any residual heat from altering their flavor during grinding.
  3. Once the spices have cooled, transfer them to a spice grinder or a mortar and pestle. Add 1 teaspoon of fine sea salt to the mix. Grind or crush the spices until they are evenly combined and reach a fine, uniform texture.
  4. Transfer the ground spice blend to an airtight container. Ensure the lid is tightly sealed to maintain the freshness of the spices.
  5. Store the container in a cool, dark place, such as a pantry or cupboard, away from direct sunlight. For the best aroma and flavor, aim to use the spice blend within a few months.
