Berbere Blend

Berbere blend, with its roots deep in the culinary traditions of West Africa, is a spice mix that ignites the heart of many stews and grills. While its origins are often tied to Ethiopia and Eritrea, its influence has traveled across borders, enhancing dishes with its robust character. This chili mix is integral to both everyday meals and special occasions, where its warmth and depth elevate the dining experience.

The flavor profile of Berbere is a symphony of heat and spice. The chili flakes provide a fiery base, while fenugreek and coriander add an earthy sweetness. Paprika introduces a mild smokiness, balanced by the subtle floral hints of cardamom. This blend should land on the palate with a harmonious, warm intensity, making each dish it graces an unforgettable culinary experience.

Ingredients

  • 2 tbspchili flakes
  • 1 tbspfenugreek
  • 1 tbspcoriander
  • 1 tbsppaprika
  • 1 tbspfine sea salt
  • 1 tspcardamom

Method

  1. Start by placing a dry skillet over medium heat. Add 2 tablespoons of chili flakes, 1 tablespoon of fenugreek, 1 tablespoon of coriander, and 1 teaspoon of cardamom to the skillet. Stir the spices continuously to ensure even toasting. You'll know they are ready when the spices release a warm, nutty aroma and the chili flakes deepen in color, which should take a few minutes.
  2. Remove the skillet from the heat and immediately transfer the toasted spices to a plate to cool. This prevents them from cooking further and potentially burning in the residual heat of the pan.
  3. Once the spices have cooled completely, combine them with 1 tablespoon of paprika and 1 tablespoon of fine sea salt. If you have a spice grinder, use it to grind the mixture into a fine powder. Alternatively, you can use a mortar and pestle to crush the spices until they are evenly blended.
  4. Transfer the ground spice blend into an airtight container. Make sure the container is clean and dry to prevent moisture from affecting the spices.
  5. Store the container in a cool, dark place, such as a pantry or cupboard, to protect the spices from light and heat, which can degrade their flavor.
  6. For the best aroma and potency, aim to use the Berbere blend within a few months. This ensures that the spices retain their vibrant flavor, perfect for enhancing stews and grilled dishes.
