Borscht Herb Mix

In Eastern European kitchens, the borscht herb mix is a staple seasoning for both soup and pickle pots. This blend of herbs and spices is particularly cherished in Ukrainian and Russian homes, where it finds its place during the colder months when hearty soups are a daily comfort. Traditionally, these herbs are harvested and dried during the summer, then stored for use throughout the year, ensuring that even in the depths of winter, the flavors of the garden are never far from the table.

This mix combines the grassy freshness of dill with the warm, anise-like notes of caraway, the subtle earthiness of bay leaf, and a touch of salt and pepper to enhance each ingredient's natural flavor. When added to borscht, it brings a complex depth that complements the soup’s vibrant beet base, creating a taste that is both familiar and invigorating. Each spoonful is a reminder of the enduring strength of simple ingredients, artfully combined.

Ingredients

  • 2 tbspdill
  • 1 tbspcaraway
  • 1 tbspbay leaf flakes
  • 1 tbspfine sea salt
  • 1 tspblack pepper

Method

  1. Begin by placing a small, dry skillet over medium heat. Add 2 tbsp dill, 1 tbsp caraway, and 1 tbsp bay leaf flakes to the skillet. Stir the spices gently and continuously with a wooden spoon to ensure even toasting. You'll know they're ready when the dill turns a slightly darker shade of green, and the caraway seeds release a warm, nutty aroma.
  2. Once the spices are fragrant, remove the skillet from heat and transfer the spices to a cool, dry plate. This will prevent them from continuing to cook in the residual heat of the pan. Allow the spices to cool completely; this should take a few minutes and is crucial for maintaining their aromatic properties.
  3. After the spices have cooled, combine them with 1 tbsp fine sea salt and 1 tsp black pepper in a spice grinder or mortar and pestle. Grind the mixture until it reaches a uniform consistency, resembling coarse sand. This ensures that each component is evenly distributed throughout the mix.
  4. Transfer the ground spice mix into an airtight container, such as a small glass jar with a tight-fitting lid. Store the jar in a cool, dark place, like a pantry or cupboard, to protect the delicate flavors from light and moisture.
  5. For the best aroma and flavor, use the Borscht Herb Mix within a few months. This mix is perfect for seasoning borscht soups and can also enhance the flavor of pickling brines.
