Caribbean Chili Salt 2

Caribbean Chili Salt 2 is a pantry staple that weaves its way into the fabric of everyday Caribbean cooking. Its versatility makes it a beloved kitchen companion, often sprinkled over grilled meats, fresh fish, or even ripe tropical fruits for an unexpected twist.

The blend delivers a bold, fiery kick from the chili flakes, tempered by the earthy warmth of cumin and the gentle savoriness of garlic powder. Fine sea salt ties these flavors together, creating a balanced seasoning that enhances without overwhelming. Ingredients

  • 3 tbspchili flakes
  • 2 tbspfine sea salt
  • 1 tbspgarlic powder
  • 1 tspcumin

Method

  1. Begin by placing a dry, heavy-bottomed skillet over medium heat. Add 3 tablespoons of chili flakes to the skillet, ensuring they are spread out in an even layer. Stir the flakes gently with a wooden spoon for about 2 to 3 minutes, until they release a warm, spicy aroma and deepen slightly in color, indicating they are toasted.
  2. Add 2 tablespoons of fine sea salt to the skillet with the toasted chili flakes. Stir continuously to prevent the salt from clumping and to ensure it absorbs the chili's heat and aroma. This should take about 1 minute, during which the salt will start to look slightly moist from the chili oils.
  3. Next, sprinkle in 1 tablespoon of garlic powder and 1 teaspoon of cumin. Stir the mixture for another 1 to 2 minutes until the garlic powder and cumin are well incorporated and you can smell the earthy, warm scent of cumin blending with the chili and garlic.
  4. Remove the skillet from the heat and transfer the spice mixture to a large plate or shallow bowl. Spread it out evenly to cool completely. This cooling step is crucial to prevent moisture from forming when you grind or store the blend.
  5. Once the spices are completely cool, use a spice grinder or mortar and pestle to grind the mixture until it reaches your desired consistency. Aim for a fine, even texture that allows the flavors to meld seamlessly.
  6. Transfer the ground Caribbean Chili Salt 2 into an airtight container. Ensure the container is sealed tightly to preserve the blend's potency and store it in a cool, dark place away from direct sunlight.
