Caribbean Chili Salt is a pantry staple across the islands, a versatile blend that finds its way onto tables year-round. Whether you're in the heart of Kingston or a beachside shack in Barbados, this fiery mixture is a trusted companion to grilled seafood, roasted vegetables, and tropical fruit salads. Its roots are as varied as the islands themselves, capturing a shared love for bold and unapologetic flavors.

Expect a punch of heat from chili flakes, balanced by the earthiness of cumin and a hint of garlic. This blend brings a salty depth that enhances without overwhelming. Sprinkle it with a knowing hand, and watch as simple dishes transform, each bite carrying a whisper of the Caribbean breeze.

Ingredients

  • 3 tbspchili flakes
  • 2 tbspfine sea salt
  • 1 tbspgarlic powder
  • 1 tspcumin

Method

  1. Place a small, dry skillet over medium heat. Add 3 tablespoons of chili flakes and 1 teaspoon of cumin to the skillet. Stir continuously with a wooden spoon to ensure even toasting. You'll know they're ready when the chili flakes darken slightly and a warm, spicy aroma fills the air, which should take about 2 to 3 minutes.
  2. Remove the skillet from the heat and immediately transfer the toasted spices to a plate to cool. This prevents them from continuing to cook in the residual heat of the pan, which could lead to bitterness.
  3. Once the spices have cooled completely, combine them with 2 tablespoons of fine sea salt and 1 tablespoon of garlic powder in a spice grinder or a mortar and pestle. Grind or mix until you achieve a uniform texture, ensuring the salt and spices are evenly distributed.
  4. Transfer the Caribbean Chili Salt to an airtight container. Choose a container that seals well to prevent moisture from entering, which can degrade the quality of the blend.
  5. Store the container in a cool, dark place, such as a pantry or cupboard, away from direct sunlight. This helps preserve the vibrant flavors and aromas of the spices.
  6. For optimal flavor, use the Caribbean Chili Salt within a few months. The blend will gradually lose its potency over time, so it's best enjoyed while the spices are still fresh and aromatic.
