Caribbean Curry Powder

Caribbean curry powder is a foundational element in many homes across the islands, a vibrant blend that infuses curries with depth and warmth. The recipe for this aromatic powder is passed down through generations, each family adding their own distinctive touch.

This curry powder delivers a robust flavor profile, where the earthy richness of turmeric meets the citrusy brightness of coriander, balanced by the nutty warmth of cumin and the subtle bitterness of fenugreek. The fine sea salt and a hint of black pepper round off the blend, creating a harmonious spice mix that elevates every dish it graces.

Ingredients

  • 2 tbspturmeric
  • 2 tbspcoriander
  • 1 tbspcumin
  • 1 tbspfenugreek
  • 1 tbspfine sea salt
  • 1 tspblack pepper

Method

  1. Begin by placing a dry, heavy-bottomed skillet on the stove over medium heat. Add 2 tablespoons of turmeric, 2 tablespoons of coriander, 1 tablespoon of cumin, 1 tablespoon of fenugreek, 1 tablespoon of fine sea salt, and 1 teaspoon of black pepper directly into the skillet. Stir the spices continuously with a wooden spoon to ensure even toasting and prevent burning.
  2. Continue stirring the spices for about 3 to 5 minutes. You will know they are ready when the spices release a warm, earthy aroma and the color of the turmeric deepens slightly. Be attentive to the scent, as this is your primary cue for doneness.
  3. Once the spices are toasted, remove the skillet from the heat and immediately transfer the spices to a large plate or shallow bowl. This helps them cool quickly and prevents further cooking from residual heat in the pan.
  4. Allow the spices to cool completely to room temperature. This is crucial for maintaining the integrity of the spices' flavors when you grind them.
  5. Once cooled, transfer the spices to a spice grinder or a mortar and pestle. Grind them until you achieve a fine, even powder. If using a mortar and pestle, work in small batches to ensure consistency.
  6. After grinding, check the texture of the curry powder. It should be smooth and free of any large granules. If necessary, sift the powder through a fine sieve to remove any remaining larger pieces.
  7. Store the finished Caribbean Curry Powder in an airtight container. Place the container in a cool, dark place, such as a pantry or cupboard, to preserve its vibrant aroma and flavor.
  8. For the best aroma and potency, aim to use the curry powder within a few months. This homemade blend will serve as a flavorful base for traditional Caribbean goat and vegetable curries.
