Ingredients

  • 2 tbspground cumin
  • 2 tbsppaprika
  • 1 tbspground coriander
  • 1 tspblack pepper
  • 1 tbspfine sea salt

Method

  1. Start by placing a small, dry skillet over medium heat. Add 2 tablespoons of ground cumin, 2 tablespoons of paprika, and 1 tablespoon of ground coriander to the skillet. Stir the spices gently and continuously with a wooden spoon to ensure even toasting. You'll know they're ready when the spices release a warm, earthy aroma, which should take about 2 to 3 minutes.
  2. Once the spices are toasted and fragrant, immediately remove the skillet from the heat to prevent burning. Transfer the spices to a wide plate or a sheet of parchment paper to cool completely. This cooling step is crucial to prevent the spices from clumping when combined later.
  3. After the spices have cooled completely, combine them in a mixing bowl. Add 1 teaspoon of black pepper and 1 tablespoon of fine sea salt to the bowl. Use a whisk or a spoon to mix the spices thoroughly, ensuring an even distribution of flavors throughout the rub.
  4. Once the spices are evenly combined, transfer the mixture to an airtight container. A glass jar with a tight-fitting lid works well for this purpose. Ensure the container is clean and dry to maintain the freshness of the rub.
