Ingredients

  • 2 tbspcinnamon
  • 1 tbspcardamom
  • 1 tspcloves
  • 1 tspblack pepper
  • 1 tspfine sea salt

Method

  1. Begin by placing a small, dry skillet over medium-low heat. Add 2 tablespoons of cinnamon, 1 tablespoon of cardamom, 1 teaspoon of cloves, and 1 teaspoon of black pepper to the skillet. Stir the spices gently and continuously with a wooden spoon to ensure even toasting. You will know they are ready when the aroma becomes rich and inviting, and the spices slightly darken in color, which should take a few minutes.
  2. Once the spices are toasted, remove the skillet from the heat and transfer the spices to a cool, dry plate to prevent further cooking. Allow them to cool completely to room temperature. This cooling step is crucial as it prevents moisture from forming, which can affect the grinding process.
  3. After the spices have cooled, use a spice grinder or a mortar and pestle to grind them into a fine powder. If using a grinder, pulse in short bursts to avoid overheating the spices, which can alter their flavor. Ensure all spices are combined evenly, with no large pieces remaining.
