Ingredients

  • 2 tbspground cumin
  • 2 tbsppaprika
  • 1 tbspground coriander
  • 1 tspblack pepper
  • 1 tbspfine sea salt

Method

  1. Place a dry skillet over medium heat. Add 2 tbsp ground cumin, 2 tbsp paprika, 1 tbsp ground coriander, and 1 tsp black pepper to the skillet. Stir continuously with a wooden spoon to ensure even toasting. The spices are ready when they release a warm, aromatic fragrance and the color deepens slightly, which should take about 2 to 3 minutes.
  2. Remove the skillet from heat and transfer the toasted spices to a large plate or a cool surface to stop the cooking process. Allow them to cool completely to room temperature. This step is crucial to prevent moisture from forming when you grind them.
  3. Once the spices are completely cool, combine them with 1 tbsp fine sea salt in a spice grinder or mortar and pestle. Grind the mixture until it reaches an even, fine consistency. This ensures that the flavors are well-integrated and the rub will coat ingredients evenly.
