Colombian Chili Salt is a pantry staple that elevates everyday meals with its fiery kick and aromatic depth. Ingredients

  • 3 tbspchili flakes
  • 2 tbspfine sea salt
  • 1 tbspgarlic powder
  • 1 tspcumin

Method

  1. Begin by placing a dry, heavy-bottomed skillet over medium heat. Add 3 tablespoons of chili flakes to the skillet, spreading them out evenly. Stir the chili flakes continuously with a wooden spoon for about 2 to 3 minutes, until they release a warm, spicy aroma and deepen slightly in color. This toasting enhances the flavor of the chili flakes.
  2. Once the chili flakes are toasted, add 2 tablespoons of fine sea salt, 1 tablespoon of garlic powder, and 1 teaspoon of cumin to the skillet. Stir the mixture continuously for another 1 to 2 minutes. The salt will help absorb the oils released by the spices, and you should notice a fragrant, savory aroma as the spices warm.
  3. Remove the skillet from the heat and transfer the spice mixture to a large plate or a wide, shallow bowl. Spread the mixture out to allow it to cool completely. This step is crucial as it prevents moisture from condensing when you grind or combine the spices, which could lead to clumping.
  4. Once the spices are completely cool to the touch, transfer them to a spice grinder or a mortar and pestle. Grind the mixture until it reaches a uniform texture, ensuring that the salt and spices are evenly combined. If using a mortar and pestle, work in small batches to achieve a consistent blend.
  5. Transfer the ground Colombian Chili Salt to an airtight container, such as a glass jar with a tight-fitting lid. Store the jar in a cool, dark place, like a pantry or cupboard, to protect the spices from light and moisture, which can degrade their flavor.
