Ingredients

  • 2 tbspground cumin
  • 1 tbspachiote
  • 1 tbspgarlic powder
  • 1 tsporegano
  • 1 tbspfine sea salt
  • 1 tspblack pepper

Method

  1. Place a small, dry skillet on the stove over medium heat. Add 2 tablespoons of ground cumin, 1 tablespoon of achiote, 1 tablespoon of garlic powder, 1 teaspoon of oregano, 1 tablespoon of fine sea salt, and 1 teaspoon of black pepper. Stir the spices continuously with a wooden spoon to ensure even toasting. You'll know they're ready when the cumin and achiote release a warm, earthy aroma, and the mixture takes on a slightly deeper color.
  2. Once the spices are toasted, remove the skillet from the heat and transfer the mixture to a cool, dry plate. Spread the spices out in a thin layer to allow them to cool completely. This prevents any residual heat from continuing to cook the spices, which could lead to a bitter taste.
  3. After the spices have cooled, use a mortar and pestle or a spice grinder to grind the mixture into a fine, even powder. If using a mortar and pestle, work in small batches to ensure an even consistency. If you prefer a coarser texture, simply combine the spices thoroughly without grinding.
  4. Transfer the ground or combined spices into an airtight container, such as a glass jar with a tight-fitting lid. Store the container in a cool, dark place, like a pantry or cupboard, to protect the seasoning from light and moisture, which can degrade its flavor.
