Colombian House Rub is a staple in many Colombian kitchens, providing a foundational seasoning for a variety of dishes. Drawing from the rich culinary traditions of the country, this blend is used throughout the year to imbue meats, stews, and vegetables with its distinctive flavor. It's a pantry essential, ready to elevate everyday meals with just a sprinkle.

The rub is a harmonious blend of earthy cumin, smoky paprika, and fragrant coriander, balanced by a touch of black pepper and fine sea salt. Each pinch delivers a robust yet nuanced taste, enhancing the flavors of the dish without overpowering them. It's the secret handshake of Colombian cooking, quietly unifying the meal with its warm, inviting notes.

Ingredients

  • 2 tbspground cumin
  • 2 tbsppaprika
  • 1 tbspground coriander
  • 1 tspblack pepper
  • 1 tbspfine sea salt

Method

  1. Place a small, dry skillet over medium heat. Add 2 tablespoons of ground cumin, 2 tablespoons of paprika, 1 tablespoon of ground coriander, and 1 teaspoon of black pepper to the skillet. Stir the spices constantly with a wooden spoon to ensure even toasting. You'll know they're done when the aroma becomes rich and the color deepens slightly, about 3 to 5 minutes.
  2. Once the spices are toasted, remove the skillet from the heat and transfer the spices to a large plate or a wide bowl. Spread them out in a thin layer to allow them to cool completely. This step is crucial to prevent any residual heat from continuing to cook the spices, which could lead to a burnt taste.
  3. Once the spices are completely cool, combine them with 1 tablespoon of fine sea salt in a spice grinder or a mortar and pestle. Grind or mix the spices until they are evenly combined and the texture is consistent throughout. This ensures that each use of the rub will have a balanced flavor.
  4. Transfer the blended rub into an airtight container, such as a glass jar with a tight-fitting lid. Store the container in a cool, dark place, like a pantry or cupboard, to protect the spices from light and moisture, which can degrade their flavor over time.
  5. For the best aroma and flavor, aim to use the Colombian House Rub within a few months. Over time, the potency of the spices will diminish, so it's best to make smaller batches if you don't plan to use it frequently.
