Ingredients

  • 3 tbspkombu powder
  • 2 tbspbonito powder
  • 1 tbspdried shiitake powder
  • 1 tspfine sea salt

Method

  1. Begin by placing a small, dry skillet over low heat. Add 3 tablespoons of kombu powder, 2 tablespoons of bonito powder, and 1 tablespoon of dried shiitake powder to the skillet. Stir the powders gently with a wooden spoon for about 2 to 3 minutes, ensuring even exposure to the heat. You will know they are ready when the aroma becomes rich and slightly smoky, indicating the powders are toasted.
  2. Remove the skillet from the heat and let the toasted powders cool completely in the pan. This cooling step is crucial as it prevents moisture from affecting the texture when you combine them later.
  3. Once the powders are completely cool, transfer them to a small mixing bowl. Add 1 teaspoon of fine sea salt to the mixture. Use a whisk or a spoon to combine the powders and salt thoroughly, ensuring an even distribution of flavors throughout the blend.
  4. Transfer the blended dashi powder into an airtight container, such as a glass jar with a tight-fitting lid. Store the container in a cool, dark place, like a pantry or cupboard, to preserve its flavor and aroma.
  5. For optimal taste, use the dashi powder blend within a few months. This ensures that the flavors remain vibrant and the aroma is at its peak when you use it as a base for soups and simmered dishes.
