Ingredients

  • 2 tbspground cumin
  • 2 tbsppaprika
  • 1 tbspground coriander
  • 1 tspblack pepper
  • 1 tbspfine sea salt

Method

  1. Place a small, dry skillet on the stove over medium-low heat. Add 2 tablespoons of ground cumin, 2 tablespoons of paprika, 1 tablespoon of ground coriander, and 1 teaspoon of black pepper to the skillet. Stir the spices continuously with a wooden spoon to ensure even toasting. You'll know they're ready when the aroma becomes rich and slightly nutty, and the color of the paprika deepens slightly.
  2. Remove the skillet from the heat and immediately transfer the toasted spices to a cool, dry plate to prevent further cooking. Allow the spices to cool completely, which will take about 10 minutes. This step is crucial to prevent any moisture from affecting the texture when you combine them.
  3. Once cooled, place the spices in a small bowl and add 1 tablespoon of fine sea salt. Mix the spices thoroughly with a spoon until they are evenly combined, ensuring that the salt is distributed throughout the mixture.
  4. Transfer the spice blend to an airtight container, such as a glass jar with a tight-fitting lid. Store the jar in a cool, dark place, like a pantry or cupboard, to protect the spices from light and heat, which can diminish their flavor over time.
